Best. Cookie. Ever.

Peanut Butter Oatmeal Heath Bit Cookies
I'd show you a photo of the cookie itself but, you know,
they were eaten mighty quick.

Ours was a slightly modified version of the Better Homes and Garden's Peanut Butter-Oatmel Rounds recipe.
Simple and oh so yum.

3/4 c butter, softened
1/2 c peanut butter
1 cup sugar
1/2 packed brown sugar
1 tsp baking pwd
1/2 tsp baking soda
2 eggs
1 tsp vanilla
1 1/4 c flour
2 c rolled oats
1 1/2 c (or thereabouts) Heath bits

Beat butter and peanut butter until combined. Add sugar, brown sugar, bk pwd, and bk soda. Beat until combined, scraping sides of bowl. Beat in eggs and vanilla until combined. Mix in flour.
Stir in oats and Heath bits.

Drop rounded teaspoons on ungreased cookie sheet. Bake in 375 degree oven about 10 mins (we did 12 mins) or until edges are lightly browned. Transfer to wire rack and let cool.
(If you can hold out that long, that is.)


  1. I read this as health bit cookies, yay I was excited for a healthy cooke, oh well, I will still have to try it, looks delish!

  2. teija, that is too funny since i read it the same way. but this sounds even better. mmmmmmm. when i am done being gestaionally diabettic i will have to try them.
